Quinoa patties

Found this recipe and had to try it. Even my husband, the quintessential carnivore was up for it and ended up loving them.

Pretty basic recipe:

1 cup uncooked quinoa (2 cups water to 1 cup quinoa, 1/2 tsp. salt. bring water to boil add quinoa and cook on low for 20 min.) Should make about 2 cups cooked.

3/4 cup shredded cheddar cheese (or other variety, if you prefer)

1/2 cup cottage cheese

1 Cup shredded zucchini or carrot

3 eggs

3 tablespoons all purpose flour

1 small red onion, diced

1/4 teaspoon black pepper

1/4 teaspoon ground cumin

1/8 teaspoon salt

Olive oil for frying

Mix all the above ingredients together. Heat a large skillet on medium heat and lower to medium low after pan has heated up. Add oil and then scoop about 1/2 cup of the mixture onto pan and flatten to create the patties. A cast iron skillet works great and if it is large enough you can get about 4 patties going at the same time. The lower the heat the better they cook through, but it takes longer. Cook them until browned on each side, about 5-10 min. depending on how high you have the heat.

Cucumber-less Tzatziki Dressing:

1 – 6 ounce container Greek yogurt

3 tbls sour cream

1 tsp. dill

1/2 tsp. garlic salt
